Mini Cast Iron Double Crust Apple Pie:


Crust-

- heaping 1/2 cup flour

- 1 teaspoon sugar

- 1/4 teaspoon salt

- 3-4 tablespoons of ICE COLD KERRYGOLD (gotta be kerrygold) unsalted butter

- about 1/8 cup of ice water


Combine dry ingredients in a cuisinart/food processor. Add ice cold butter (cubed) until dough just starts to come together. Add a touch of water. You want the crust to come together but just barely (if its too sticky add a dash more water). If it is too dry add the additional tablespoon of butter. Wrap dough and put in fridge.


Now the pie...

- 2 granny smith apples (peeled and cored)-sliced thinly

- juice of 1/2 lemon

- 1/4 cup of brown sugar

- 1/8 cup of white sugar

- 1 teaspoon of cinnamon

- dash of nutmeg

- 1 teaspoon vanilla extract

- 1/2 teaspoon almond extract

- 1 teaspoon flour


Preheat oven 375. Combine all the above ingredients in a bowl. Allow to macerate until juices begin to pull from the apples. Taste a slice to check on seasonings and sweetness. Add a dash more of anything you think it needs. Roll out mini crust in to two circles. Lay 1st crust into mini cast iron (making sure you have a bit of crust over hang, thats the best part!) Fill (it should be nice a domed and full!) with apple mixture AND juices. Lay 2nd crust on top. Pleat edges to connect top and bottom crust. Cut vents. Brush with a bit of cream or egg and sprinkle white sugar on to crust. Bake for 25-35 minutes (depending on oven quality). Crust should be golden brown. Allow to cool. Serve with a scoop of GOOD vanilla ice cream! Bon Appetit


From Sloan and Kathy: This is an original creation that my mom and I developed. We have taken many years to perfect our pie crust recipe (and we think we've found the PERFECT combination!) So we riffed off of that to create this mini dessert. We LOVE apple pie and what better time to enjoy some apples than at the tailend of apple season. As well as enjoying something nostalgic, this recipe is the epitome of comfort to help get them through these crazy times.
