Homemade corn dogs and french fries

Homemade Corn Dogs

1 package hot dogs of choice

½ c. yellow corn meal

½ c. all-purpose flour

2 T. sugar

2 t. baking powder

1/8 t. salt

1 large egg

½ c. milk

Vegetable oil for frying

Add about four inches of oil to a pan and heat over medium-high heat until temperature reaches 360 degrees. In the meantime, open the package of hot dogs and cut them in half (if you want!). Using popsicle sticks or dowels, press one into each hot dog half. Thoroughly dry off each hot dog using a paper towel. In a large bowl, mix together the corn meal, flour, sugar, baking powder and salt. Add in the milk and the egg and combine well. Transfer the batter to a tall glass, if you prefer (makes the dipping part a bit easier). When the oil is ready, dip one hot dog at a time and carefully lower into the oil. Cook for about 2-3 minutes, until golden and crispy. Remove from oil with tongs and place on a paper towel-lined plate. Continue with the remaining hot dogs. Allow to cool slightly and enjoy!

Homemade French Fries

1 potato of choice (russet, sweet potato, etc.) per 2 servings

1 T. olive oil

Salt and pepper to taste

Preheat oven to 400 degrees. Thinly slice your potatoes of choice into long strips – the thinner they are they quicker they will cook. Toss with the olive oil and seasonings until coated. Place on a baking sheet and cook for about 20-25 (depending on thickness). Check occasionally and turnover to get an all-around doneness.
