1 c. white or brown rice
1 T. sesame oil
1 pound ground beef (could also use ground chicken, turkey or pork)
2 T. freshly grated ginger (or minced)
4 garlic cloves, minced
½ t. red pepper flakes (or Sriracha to taste)
½ c. orange juice (freshly squeezed – clementines work too!)
3 T. soy sauce
2 small heads fresh broccoli, cut into florets
Sesame seeds to garnish
Place rice in a saucepan with two cups of water. Simmer over low-medium for 20-30 minutes.
In a large non-stick pan, warm the sesame oil over low-medium heat. Add meat and cook until browned.
Add in the ginger, garlic, red pepper flakes, orange juice and soy sauce. Stir well and bring to a simmer – cook for about 3-5 minutes or until sauce has reduced and thickened. Stir well and remove from heat.
Meanwhile, place broccoli in a saucepan and cover with water (about 3 cups worth). Cook until tender – about 5 minutes.
When ready to enjoy, top the rice with the meat mixture and a few florets of broccoli. Top with sesame seeds and additional soy sauce, if desired. Enjoy!
