½ c fresh blueberries or strawberries

3 T. water

1-2 T. honey (to taste)

2 packets gelatin

Mix fruit, water and honey in a blender or food processor until smooth. Pour puree into saucepan. Sprinkle gelatin over puree slowly while stirring thoroughly so it does not clump. Heat over low/medium and stir constantly until gelatin is dissolved. Do not boil. Remove from heat. Use a dropper or pour directly into molds. Allow to rest in refrigerator for approximately 1 hour or at room temperature for 4-5 hours. Enjoy!

Elderberry gummies:

1 c. dried elderberries

1 inch fresh ginger

3 ½ c. water

½ c. honey

4 T. gelatin

Place elderberries and three cups of water in a saucepan and simmer for 40 minutes. Remove from the heat. Strain out elderberries and return juice to the saucepan. Simmer over low heat and reduce juice to one cup. Stir occasionally and do not let it scorch. Add honey to the hot juice. Simmer the sweetened juice for 20 minutes. Remove from heat. In a separate bowl, sprinkle the gelatin over the remaining half cup of cold water. Allow the gelatin to bloom for five minutes. Stir the gelatin into the hot juice until completely dissolved. Use a dropper or pour directly into molds. Allow to rest in refrigerator for approximately 1 hour or at room temperature for 4-5 hours.
